I had the pleasure of finding this booth at the Canton Farmer’s Market today. I got a Tomato Basil, and a Cinnamon Raisin loaf. This is some of the best bread I’ve ever had! 10/10 would recommend!

ABOUT JOE & HIS BREAD...

I remember seeing the rack, full of bread, and thinking, ‘this is the greatest thing in the world’. I believe at that moment I realized my life calling. It was December of 1995; I was just out of high school in my little home town in Northern Michigan. I walked up to the door of Gerard Grabowski with an earnest desire, “I want to learn this”. I was so impressed with the basic ‘down to earth’ wood fired brick oven and using organic products to make real bread.

What Gerard was doing was such an inspiration; I knew this is what I wanted to do. That one knock on the door lead to my 6 1⁄2 year apprenticeship with Gerard. I could not have asked for a better teacher, he had apprenticed under the ‘old world’ brick oven bakers in Europe.

Needing more to sustain my growing family, I was forced to change occupations and during that time, made the move to Ohio. Dad, my life mentor, knew the passion I had for following this old world tradition of baking and never stopped encouraging me to bake again. I never lost the vision and in the spring of 2015 supported by my wife and inspired by friends and family, I began feeding my sourdough ‘mother’ again. I started with just a handful of customers, mostly friends and family.

Building life giving bread that is wholesome, organic, isn't destroying our bodies and can be consumed by people struggling with food allergies, is very fulfilling for us. It’s such a blessing to see family members, with leaky gut and food allergies, enjoying a slice of the Einkorn wheat bread with no negative results. We are privileged to be using 100% organic Einkorn wheat, locally grown in southern Ohio. Einkorn is one of the oldest grains known and has many health benefits. We use only 100% organic flour from a local distributor for all our breads. We consider it a great blessing as a family to be part of a community helping each other find a better life-style, in this toxic environment. Working together as a family creates strong family bonds, many real life lessons, experiences and wonderful memories.

Our son finds great pride and joy being the ‘fireman’ keeping the stove loaded and burning while it is heating up to bake. We currently bake up to 30 loaves at a time. Our daughters help where they can. We love what we do...meeting people, helping people, and trying to make this world a better place.

We give all glory to God, Our heavenly Father for His bountiful blessings and guidance.
